Ales and Lager
Ales are beer brewed with “top fermentation” where the yeast rises. Characteristics of an ale is that it has rich taste and complicated bouquet, but fruity flavor.
Lagers are beer brewed with “bottom fermentation” where the yeast settles. The characteristics of lager is that the taste is mild and smooth with a bitter aftertaste.
・Malt from germinated barley gets alcoholic fermented with beer yeast. Second longest history after wine.
・In ancient Egypt, beer was used as medicine and it was sold in Japan at the beginning of Meiji Period at pharmacies.
