Cheese of the Orient
Furu (also called funyu) is tofu fermented with lactic acid bacteria, giving it a sour taste and distinctive smell. Referred to as the “Cheese of the Orient.”
Overview
・Mold is added to make tofu initially into a mold tofu, which is then put in brine to take the mold off, put in a vat with alcohol and is shut tight and buried in earth for fermentation/maturing.
・Deemed to be the origin of tofuyo of Okinawa, but the characteristics of this furu is the adding of mold.
