Most of the people may don’t know “chocolate is fermented food”.
Most of the people may don’t know “chocolate is fermented food”. However in fact, the cacao beans go through fermentation process, after they are harvested for 5-7 days.
Yogurt Truffle, you can consume Living lactic acid bacteria with a lot of benefit of chocolate.
So in this recipe, I tried to make truffle chocolate in healthier way.
How about adding yogurt to chocolate in low temperature. In this way you can consume
“Living lactic acid bacteria”
with a lot of benefit of chocolate.
・1pcs Chocolate bar
・Plan yogurt (same amount of chocolate)
1. Melt chopped chocolate in a dry bowl set over simmering water, to about 48-50ºC.
2. Remove from heat then add yogurt and mix it.
3. Let it cool for a while.
4. Roll one spoon of chocolate in hands.
5. Dust cacao powder.

Chocolate is one of the best source of natural antioxidant plant compounds, called “flavonoids”.
Cocoa products account for a major proportion of flavonoid intake in many countries now.
Flavonoids are bitter and astringent (you’d know this fact if you’ve eaten unsweetened chocolate or cacao nibs). This is a reason many chocolate products are sweetened and added milk.
